Tater Tot Casserole


From Healthy Cooking:


1 lb lean ground beef
1/2 lb extra-lean ground turkey
1 16 oz pkg frozen mixed vegetables, thawed and drained
3/4 cup french fried onions
1 10 3/4 oz can reduced fat/sodium condensed cream celery soup
1 10 3/4 oz can reduced fat/sodium condensed cream chicken soup
1/2 cup fat-free milk
4 cups frozen tater tots, thawed

In a large skillet, cook beef and turkey over medium heat until no longer pink. In a 13x9 inc baking dish coated with cooking spray, layer the meat mixture, vegetables and onions.
In a small bowl, combine soups and milk; spread over onions. Top with tater tots. Bake, uncovered, at 350 for 55-60 minutes or until golden brown.
1 cup is 340 calories
14 g fat
44 mg cholesterol
657 mg sodium
33 g carbs
4 g fiber
22 g protein
I personally felt it lacked a little in the flavor category. Next time, I'll be adding some Italian seasoning or some such . . . gotta make up for that luck of butter! But, still, everyone ate their entire bowl of the yummy casserole!
