I'm working at finding foods that I can make and still enjoy with the dietary restrictions I'm *supposed* to be following. I've come up with this recipe that I like . . .
1/2 cup butter
1 cup white sugar
1 tsp molasses
1/2 c applesauce
1 cup pureed pumpkin (2 cups if using canned pumpkin)
2 tsp Cinnamon
2 1/2 cups whole wheat flour
2 tsp baking soda
pinch of salt
Mix it up. Makes 12 muffins. 350 for around 20 minutes.
I'm currently working on removing the sugar and replacing it with honey. So far, I did 1/2 and 1/2 and the muffins still were delicious!
