Street Fair!







Okay, so it's no longer called the Street Fair, but Hello! I don't do change well ;) We met up with Dave and Courtney and enjoyed a nice evening with friends as we strolled around and enjoyed the very colorful characters that crawl out of the woodwork seemingly just for these type events! Best off - it was all free (other than the food). Only on USA could you see more CHARACTERS hahahaha!






We finished off our evening with homemade Amish Doughnuts - made to order. OH MY GOOD GRAVY. DELISH! Then again, anything yummy is almost always DELISH when someone else makes it ;)

Chicken Tetrazzini


I wasn't so sure I'd like this recipe - but OH MY GOSH it is so good! Miss Mia liked it so much she had 2 bowlfuls! Even my Dad - Mr. EW! THERE IS SOMETHING GREEN IN MY FOOD! liked this meal!


8 oz mini shells
2 cooked and shredded chicken breasts
1/2 cup shredded zucchini
1/2 cup chopped carrots
1/2 cup chopped onion
3 T butter
4 cloves garlic, chopped
1 can cream of chicken soup
1/2 cup sour cream
1/2 cup milk
1/2 cup Parmesan cheese
salt and pepper to taste
While the mini-shells are boiling, melt the butter on low heat in a skillet. Add garlic, onion, zucchini and carrots. Saute for about 3 minutes. Add soup, sour cream, milk, cheese and chicken. Stir over low heat until noodles are done boiling. Drain noodles and add to the mixture. Toss well and serve immediately.
* low fat options work well
* using Pam instead of butter also works well

Meal Planning Monday!

Last week was another successful week for me in the meal planning arena. Again, it is so nice to come home from work and not have any stresses over what I should have for dinner!

This week, we seem to have settled on a theme of CHICKEN. It wasn't planned that way, it just kinda happened as we decided on our meals. Again, all new recipes - I really don't like having the same thing often. We'll see what we think of these ones. And yes, Friday is another Crock Pot Meal for Steve to "cook" for us.

Monday - Chicken Tetrazzini
Tuesday - Corn Dog Casserole
Wednesday - Hula Stir Fry
Thursday - Leftovers (Jaime @ dinner with Friends)
Friday - Chicken Stuffing in a Pot

Fiesta Ravioli


1 25 oz package frozen beef ravioli
1 10 oz can enchilada sauce
1 8 oz jar salsa
2 cups shredded Monterey Jack Cheese
1 2.25 can sliced ripe olives, drained

Cook ravioli according to package directions. In large skillet, combine enchilada sauce and salsa. Cook and sit over medium heat until heated through. Drain ravioli; add to sauce. Top with cheese and olives. Cover and cook over low heat for 3-4 minutes until cheese is melted.
Yield - 6 servings
* notes: using mild enchilada sauce is still quite spicy for some people
low fat cheese and homemade salsa are still yummy in this recipe
not the prettiest looking dish, but still very good
