Chicken Tetrazzini


I wasn't so sure I'd like this recipe - but OH MY GOSH it is so good! Miss Mia liked it so much she had 2 bowlfuls! Even my Dad - Mr. EW! THERE IS SOMETHING GREEN IN MY FOOD! liked this meal!


8 oz mini shells
2 cooked and shredded chicken breasts
1/2 cup shredded zucchini
1/2 cup chopped carrots
1/2 cup chopped onion
3 T butter
4 cloves garlic, chopped
1 can cream of chicken soup
1/2 cup sour cream
1/2 cup milk
1/2 cup Parmesan cheese
salt and pepper to taste
While the mini-shells are boiling, melt the butter on low heat in a skillet. Add garlic, onion, zucchini and carrots. Saute for about 3 minutes. Add soup, sour cream, milk, cheese and chicken. Stir over low heat until noodles are done boiling. Drain noodles and add to the mixture. Toss well and serve immediately.
* low fat options work well
* using Pam instead of butter also works well
