1 25 oz package frozen beef ravioli
1 10 oz can enchilada sauce
1 8 oz jar salsa
2 cups shredded Monterey Jack Cheese
1 2.25 can sliced ripe olives, drained
Cook ravioli according to package directions. In large skillet, combine enchilada sauce and salsa. Cook and sit over medium heat until heated through. Drain ravioli; add to sauce. Top with cheese and olives. Cover and cook over low heat for 3-4 minutes until cheese is melted.
Yield - 6 servings
* notes: using mild enchilada sauce is still quite spicy for some people
low fat cheese and homemade salsa are still yummy in this recipe
not the prettiest looking dish, but still very good
