Chocolate Cake


In my search for foods that are healthier and still yummy, I came across this recipe. It's still not a "health" food, but it's better than other recipes I've found. The yogurt makes this case nice and fudgy. This is a messy cake - mainly because I didn't give it time to cool before putting it the Tupperware container and taking it to Easter Dinner.

1 pkg reduced fat devil's food cake mix
1/2 c baking cocoa
2 egg whites
1 egg
1 1/3 cups water
1 cup reduced-fat plain yogurt
1 1/2 tsp confectioners' sugar

In large mixing bowl, combing cake mix and cocoa. Combine the egg whites, egg, water and yogurt; add to dry ingredients and beat well. Pour into a 10-cup fluted tube pan coated with nonstick cooking spray.

Bake at 350 for 35-40 minutes - until toothpick inserted near center comes out clean. Cool for 10 minutes before removing from pan to wire rack to cool. Sprinkle with confectioners' sugar.
